When a customer finishes their order, how do we customize the receipt so that it can say "Keep this receipt for income tax purposes".

For the outgoing letters that confirm shipping, etc - how can we customize those? I can't find them anywhere - but I know they get sent out automatically by the shopping cart when I enter in tracking information.
