My store settings for session timeout remain at the default of 180.
Yet I just got my cart emptied after only 3 minutes of being idle.
The message even said, you have been idle for 3 minutes, your cart has been emptied.
Anyone know why?

No, that's not normal. If you open a helpdesk ticket we can determine the cause - assuming the problem is reproducible.
