Would there possibly be a way to use this software to allow people to "shop" for courses or, say, league registrations? Our local Little League organization is contemplating offering online registrations next year, and our thought is to set up a shopping cart with the various age groups as products. Parents can add the appropriate league choice to their cart and sign up that way. However, we probably need more information that just the name and address of the purchaser, such as the name and age of the participant, and maybe a shirt size or field preferance, or whatever. Is this easily accomplished?

While the cart is best used for purchasing physical items, you can probably get this to work well with a little tweaking.

You can do this via product options. Make the name a text option, and the others regular options - which will appear as SELECT inputs (drop down boxes).
